Iron Chef America: Battle Chocolate…Again!
This week, Chef Alex Stupak, who specializes in pastry, took on Iron Chef Cat Cora. The secret ingredient – chocolate! The judges were Ted Allen, chef/author Domenica Catelli, and Jeffrey Steingarden.
Chef Stupak presented five dishes: marinated bay scallops with cocoa lime vinaigrette (which Domenica called “fantastic”), chocolate stuffed quail, milk chocolate pudding (which Jeffrey thought was too challenging for comfort food), soft white chocolate with strawberries, and chocolate capsule with chocolate cake.
Iron Chef Cora presented six dishes: seabass tartare with caviar chocolate ganache (which Domenica loved, but Jeffrey thought there was not a lot of chocolate in the dish), butternut squash and chocolate anglotti, cocoa and vanilla bean poached lobster, rabbit mole (Jeffrey loved the rice), chocolate passion fruit s’mores, and a chocolate melody, which included cotton candy with chocolate.
Iron Chef Cora was defeated, but the scores were tied in taste (23) and plating (12). It was only originality that gave Chef Stupak the lead – he scored a 14 to Iron Chef Cora’s 11.
