Iron Chef America: Battle Chocolate
Yum, who wouldn’t love Battle Chocolate? The judges – the usual suspects – Ted Allen, Karine Bakhoum, and Jeffrey Steingarten – were treated to tasteful dishes by challenging Chef Graham Bowles and Iron Chef Bobby Flay.
Chef Bowles presented lobster carpaccio with white chocolate panna cotia, which Jeffrey called an “amazing dish,” savory Mexican chocolate soup, which Karine thought was a wonderful tribute to chocolate, grilled ahi tuna with chocolate essence, cocoa dusted bison tenderloin with chocolate BBQ sauce (that looked so good!), and chocolate ice cream with plantains and chocolate soda pop.
Chef Flay seemed to have a hard road ahead of him, but he presented Mexican chocolate pumpkin soup, which Karine loved, chocolate espresso duck breast, chocolate blue corn johnnycakes, which Jeffrey couldn’t figure out (is that good or bad?), dark chocolate caramel parfait with cranberry-raspberry compote, and bittersweet chocolate soufflé with blackberry-white chocolate sauce.
I thought that Chef Bowles had it, but in the end, Iron Chef Flay pulled off another victory. The scoring for taste was 26 for Flay and 21 for Bowles. The two tied for plating with each scoring 12, but Bowles did win the originality fight, scoring a 14 over Flay’s 11.
