Iron Chef America: Battle Skirt Steak
Tonight was a new “Iron Chef America” challenge between Chef Sam Mason and Iron Chef Morimoto. The secret ingredient was skirt steak. The judges were author Michael Ruhlman, actress Kate Flannery (“The Office”), and Jeffrey Steingarten.
Chef Mason presented five dishes: skirt tartare with marjoram emulsion (Jeffrey said it was strong but delicious), beef and broccoli with egg sheets, grilled skirt steak with bone marrow crème brulee (Kate loved the potatoes, but Jeffrey pointed out the steak was cold), cocoa fried skirt steak (which Jeffrey said was a wonderful combination), and skirt steak ice cream (which just sounded nasty).
Iron Chef Morimoto also presented five dishes: skirt steak duo (which Jeffrey called very original), ginger rice with sake skirt steak, ground skirt steak in cabbage (both Jeffrey and Michael agreed it was under-seasoned), and teriyaki skirt steak and marinated skirt steak.
Iron Chef Morimoto took the challenge quite easily, by a score of 53 to 46. He scored four points higher on taste and three points higher on plating while the originality was tied.
